Look for a chayote without blemishes or bruises. In order to fully enjoy its flavor, it should be eaten when it is at the end of its ripening process.
The chayote can be eaten raw or cooked and is delicious in curries, gratins or simply in salads. It also replaces squash and eggplant in recipes.
In order to preserve the chayote, it is necessary to stop its germination. To do this, place it in the refrigerator, in the crisper. The chayote will keep for several weeks.
