Jicama is a root vegetable native to Mexico and South America, often called "Mexican yam" or "Mexican turnip". Its crisp, white flesh has a slightly sweet, nutty taste, reminiscent of a pear and a water chestnut.
When buying, look for a firm, heavy jicama for its size. If it looks light, it has probably started to lose its moisture and has been sitting on the shelf for a while.
Jicama can be eaten in a variety of ways: raw in salads or as a crudité, as a chip, grilled in the oven, sautéed, stewed, and even pureed.
Jicama can be stored for up to a month in a dark place at room temperature. If you put it in the refrigerator, its shelf life will be reduced because of the humidity in the refrigerator.
