Finger limes are oval in shape, usually about the size of a baby carrot, and vary in colour from green to yellow, depending on ripeness. The flavour of finger limes is very intense and refreshing, with strong and tangy citrus notes. Their thin skin is edible, which allows them to be eaten entirely.
Choose small, oval-shaped, smooth-skinned limes that are firm but not hard. Also look for limes that are evenly colored with no dark spots or excessive discoloration.
Finger limes can be used as a garnish, in drinks, in salad dressings and marinades, or as jam. They can be excellent on seafood to replace lemon juice.
To consume them, simply cut them in half and gently squeeze them to release the pearls.
Finger limes can be stored at room temperature for 1-2 days. Afterwards, they must be stored in the refrigerator in the vegetable drawer to keep them fresh for 2 to 3 weeks. It is also possible to freeze them in an airtight bag, but this may change their texture.
