Bitter melons are most often eaten when still green, small and firm. It is very bitter, so it must be drained with salt, or blanched in boiling water for 8 to 10 minutes.
Bitter melon should be eaten 2-3 days after purchase, as it loses its firmness quite quickly. It is best stored in the refrigerator in the vegetable drawer.
