Sunchokes should be firm to the touch and their skin should not be wrinkled.
Sunchokes are prepared in the same way as the potato. After having brushed it well under water, it can be eaten mashed, fried and even in a gratin.
Sunchokes can be stored for 1 to 2 weeks in the refrigerator in the crisper.
