Found in many parts of the world, purslane is an edible plant that grows in a wide variety of environments. Rich in essential nutrients, purslane acts as an excellent detoxifier for the body. These fleshy leaves have a slightly tangy, lemony flavor and a crunchy texture.
If purslane wilts, you can revive it by immersing it in ice-cold water.
Choose purslane, which has bright-green, round, glossy leaves. They should be fleshy and firm to the touch. Avoid those with spots or signs of wilting.
Purslane can be eaten raw or cooked. It lends itself well to salads, soups and as a garnish for a variety of dishes. You can also add it to smoothies for a nutritious boost. Steamed, it makes an excellent vegetable side dish.
As purslane is quite fragile, it's best to eat it quickly. However, it can be stored in a perforated plastic bag in the refrigerator for 3 to 5 days. It can also be frozen or dehydrated for long-term storage.
