The maracuya is native to the tropical regions of South America. It is distinguished from passion fruit by its yellow color and tangier taste. Its shell is hard and wrinkled, but inside is a juicy, fragrant pulp filled with crunchy black seeds.
The ripe maracuya should be bright yellow with a wrinkled skin. If it is still green and the skin is smooth, it is simply unripe. It is normal to see some spots or cuts.
The maracuya can be eaten raw or cooked. Raw, it is cut in half with a knife and its flesh and seeds are eaten with a spoon.
If the skin of the maracuya is not yet wrinkled, it means that it is not yet ripe. You can let it ripen at room temperature. When the skin becomes wrinkled, place it in the refrigerator where it will keep for about 1 week.
