Like peas and beans, garbanzos grow in pods. Before ripening and turning yellow, then being dried, they are bright green inside a fresh, fluffy pod
Look for Garbanzo beans that have plump, fresh pods with no brown spots or wilts. Their pods should be plump and slightly fluffy.
After removing fresh peas from their pods, they can be eaten raw as a snack or simply boiled and added to a salad.
Garbanzo beans will keep for about 5 days in the refrigerator in an airtight container.
