The tomatillo has been consumed in Mexico since the time of the Aztecs. It is usually picked green and is covered with a thin membrane like the ground cherry.
Look for tomatillos that are firm and have a uniform color. Its shell should completely cover the fruit and it should be firm without being too hard or soft.
When eaten raw, tomatillos have a tangy flavor. They are mainly used to prepare Salsa Verde. When cooked, their taste softens.
Tomatillos can be stored in the refrigerator for about 3 weeks.
